Hello, I have a website with many accesses, when I change the address in the upstrem and do a reload, it does not refresh the upstrem, I have to restart and keep my site unavailable for a certain period of time.

First of all, check nginx error log. There may be various conditions which may prevent configuration reload from actually happening - for example, nginx won't be able to reload a configuration if there are syntax errors in the configuration files, or there are conflicting listening sockets, or there is not enough memory to load a second copy of the configuration. Details will be available in the error log. Most of the problems will prevent server restarts as well, though some are specific to reloads.
