The Debian 11 Bullseye release date has been announced for 14 August, about 2 weeks away.

We will definitely build Bullseye packages once it's released. Currently we cant provide those since there is no official release and no official AWS EC2 images are available (which is we use on our build system).
Looking at Debian release schedule, I see full freeze is in couple of days (17-07-2021), so it'll probably be available in the next couple of months.
